Everybody want a slightly different breakfast to start their day? This one-pan meal can accommodate everyone. It’s like having your very own diner at your campsite.
Make your grid and fill your “stations” with the breakfast item of your choice - it’s that easy. The custom design of the FirePit Griddle ensures an even cooking surface and the raised edges mean any runaway batter or egg will stay contained and properly cooked.
Gear You'll Need:
- BioLite FirePit+
- BioLite Griddle
- BioLite FirePit Lid (optional, but expedites boil and cook times)
- Prep & Grill Toolkit (or spatula and tongs of your choice)
- Mixing bowls for pancake batter and french toast coating
Ingredients
- Packet of breakfast sausage
- 6 Eggs (for frying and batter/coating)
- 2 pieces bread
- Pancake mix (or DIY with flour, baking powder, baking soda, salt, sugar)
- Milk
- Flour
- Butter (or a neutral oil is fine)
- Cinnamon, Sugar
- Salt, Pepper to taste
- Maple Syrup
Preparation
Prepare french toast coating by whisking together 2 eggs, dash of milk, cinnamon, salt and sugar. Dip bread pieces into coating, flipping back and forth until well coated and bread starts to absorb the mixture. Set aside.
Prepare pancake mix according to directions (this is likely where you’ll use your 3rd egg as well as some small amount of butter or oil). Set aside.
Heat up your FirePit and griddle. Place sausage links in a grid-style design. Gently rotate links to brown all sides using tongs. When sausages are nearly done, fill in your stations: crack two eggs (season with salt and pepper), place two pieces of coated bread, two dollops of pancake batter. Cook until done and serve with maple syrup.
Make It Your Own: Recipe Variations.
- Feeling a full pancake day? Fill every station with batter. Looking for a classic fried egg? Ditch the toast and pancakes…. This grid is totally up to you.
- Got some leftover trail mix at your campsite? Add it to your pancake batter.
- Maple syrup too bulky to bring for a single meal? Jelly and honey work well too and can be used in packable sandwiches for your hike or day trip away from your campsite.
